A Unique Convex Blade
The shape of the blade was made in collaboration with one of the most prestigious universities in Japan, the Tokyo Institute of Technology, who helped to optimise the convex shape of the blade. This edge was made completely by hand, with the edge being sharpened using five different grindstones to a precision of 0.1mm. This unique knife shape allows it to glide effortlessly through ingredients with minimal force.
Beautifully Engraved with a Beloved Symbol of Japan, the Cherry Blossom
The Edo-Zakura is a unique collaboration Takanori Tozaki, second generation owner of Toshu Giken, and only remaining legimate maker of the Edo-Togi Knife, and the creator of the project. The Edo-Zakura brand is named after Edo, the old name for Tokyo, and Zakura, which is cherry blossom in Japanese when combined with other words. To symbolise this, the blades are engraved with a special cherry blossom engraving and the kanji characters for edo and sakura.
